Paul knows that food can be one of the most powerful tools for change in the world and learning how to cook is not only an essential skill but the key to having a full and healthy life. This Stratford Chef turned culinary arts teacher, “Fink” not only spearheads the first student run cafeteria – Screaming Avocado which has been modeled in schools across Canada where students not only learn how to cook from scratch but learn business skills as well, has also created the EatFit Project which brings food and fitness to communities in Canada’s north where volunteer chefs, fitness leaders, mindfulness trainers and students live in the community sharing skills and learning about Canada’s First Peoples.
A food columnist for Reader’s Digest and a host of a Food Network series based on his Screaming Avocado, Paul has, not surprisingly, been awarded the Meritorious Service Medal, Queen Elizabeth II Diamond Jubilee Medal, the Prime Minister’s Award for Teaching Excellence and the Premier’s Award for Teaching Excellence and was the Slow Food Canada Food Hero in 2014.
